Living Proof Bakery is the culmination of more than fifty years of baking and pastry chef experience. It’s beyond art and craft; beyond passion; it’s a mission to bring the same pure, healthy breads and food upon which Civilization itself was built over millennia.

The five Primal, ancient wheats hail from the same area of ancient Persia, Khorasan, from whence the great city-states arose in the Fertile Crescent. They powered builders who raised up the towering walls of Babylon, Nineveh and Haran. There’s power in simple wheat when it’s grown on mineral laden soils, stone ground and put through a natural fermentation. The ‘sourdough’ that’s become so popular of late.

That’s why we at Living Proof Bakery are so thrilled to be a part of this timeless farmer-baker tradition. Yes, we buy certified Organic flours grown in the Golden Triangle’s deep, mineral-rich volcanic soils, but we also grow our own grains and freshly mill them. The result is a health-engendering, very tasty line of breads, croissants and pastries. Like none other.

We’re living proof that bread – simple bread – when properly grown, ground and crafted, offers up an excellent food that one can use to build a city, or maintain a happy healthy life.

Our Sourdoughs

Sourdough Bread: We also call this “Classic Sourdough” and it comes as a round boule. This very delicious bread is a combination of Durum and ‘Red Fife’ flours. The former elevates the protein profile, and the latter adds a tasty quality that’s unique to this bread. Our best seller!

Khorasan Sourdough: This bread is crafted from Khorasan wheat that goes back many millennia and is non-hybridized. It has a smooth wheaty taste with a slight buttery aspect. It’s rich in protein like the four other Primal wheats. Highly recommended. Comes as a round ‘boule’.

Einkorn Sourdough: A very pleasant-tasting bread that comes in a standard, hand-formed loaf. The name Einkorn is of German derivation (although it’s originally from Persia) and means “one grain”; perhaps because German bakers considered it the only flour one needed for bread production. A personal favorite.

Rouge de Bordeaux Sourdough: Though not an ancient grain, and a hybrid wheat, it’s in the ‘heirloom’ wheat category that’s been grown in France for hundreds of years. As you may know, the French are pretty picky about their breads, so it comes recommended by a whole nation’s baking tradition. Very pleasant flavor profile; highly digestible bread that makes wonderful sandwiches and toast.

9 Grain Sourdough: People are just crazy about this bread and for good reason: it’s extremely delicious. And nutritious! Given the plethora of non-wheat ‘support grains’, this bread is naturally alkaline and very digestible. Runs stronger, more earthy flavor notes. Comes as a hand-formed loaf.

Sourdough Baguette: Like all our sourdough breads, the 24-hour, cold-fermentation of the dough brings out the wheat’s best flavors; because the longer the fermentation, the more carbohydrates are consumed by the yeasts and bacteria that make up the ‘sour’. Carbohydrates mask the flavor elements of the wheat (which are proteins), and when they’re out of the way, all the wonderful flavors can shine forth.

Ciabatta Italian Sourdough: People spend thousands of dollars to take in a scintillating sunset blazing over the amber wheat fields of Tuscany, so they can capture the same delight that this bread induces. Its wonderful golden wheat flavor will capture you for life. A great all-purpose bread!
