Though not an ancient grain, and a hybrid wheat, it’s in the ‘heirloom’ wheat category that’s been grown in France for hundreds of years. As you may know, the French are pretty picky about their breads, so it comes recommended by a whole nation’s baking tradition. Very pleasant flavor profile; highly digestible bread that makes wonderful sandwiches and toast.
